From the predefined list

To change the paragraph bullet by selecting another bullet from the predefined list, hold SHIFT while clicking the bullet icon , and then select the bullet from the menu:

From any character

To change the paragraph bullet by selecting any character from the bullet font, place the I-beam before the bullet letter, hold CTRL while clicking the bullet icon , and then select the bullet from the list of characters.
