From the predefined list

To change the floating bullet by selecting another bullet from the predefined list, hold SHIFT while clicking the bullet icon, and then select the bullet from the menu:

From any character

To change the floating bullet by selecting any character from the bullet font, place the I-beam before the bullet letter, hold CTRL while clicking the bullet icon, and then select the bullet from the list of characters.
